
Hidden Vegetable Tomato Soup

Ingredients
- 4 Carrots peeled and chopped
- 1/4 Butternut squash
- 1 Red pepper
- 1 Orange pepper
- 1/2 Onion chopped
- 2 Tomatoes chopped
- 1 handful Cherry tomatoes
- 1 can Chopped tomatoes
- 3 cloves Garlic
- 1 Stock cube (chicken or vegetable)
- 1 pint boiling water
- 1 dash Vinegar
- 1/2 tsp Vinegar malt or cooking
- 1 sprinkle Mixed herbs
Instructions
- Place all vegetables, including garlic on a baking tray and roast until the peppers are fully roasted and softened (not the can of tomatoes)
- Boil 1 pint of water in a pan and mix in the stock cube
- Add all the cooked vegetables into the pan with stock
- Add a dash of vinegar, half a teaspoon of sugar, a sprinkle of herbs, coarse black pepper to taste
- Add the tin of chopped tomatoes to the pan and cook for a further 5 or so minutes
- Puree for a smooth soup using a plunge blender
- Add more boiling water if needed and season to taste (salt & pepper)
- Serve and garnish with basil and cracked black pepper as desired
