Hidden Vegetable Tomato Soup

Warming home made "so called" tomato soup with loads of extra hidden vegetables
Course Main Course


  • 4 Carrots peeled and chopped
  • 1/4 Butternut squash
  • 1 Red pepper
  • 1 Orange pepper
  • 1/2 Onion chopped
  • 2 Tomatoes chopped
  • 1 handful Cherry tomatoes
  • 1 can Chopped tomatoes
  • 3 cloves Garlic
  • 1 Stock cube (chicken or vegetable)
  • 1 pint boiling water
  • 1 dash Vinegar
  • 1/2 tsp Vinegar malt or cooking
  • 1 sprinkle Mixed herbs


  • Place all vegetables, including garlic on a baking tray and roast until the peppers are fully roasted and softened (not the can of tomatoes)
  • Boil 1 pint of water in a pan and mix in the stock cube
  • Add all the cooked vegetables into the pan with stock
  • Add a dash of vinegar, half a teaspoon of sugar, a sprinkle of herbs, coarse black pepper to taste
  • Add the tin of chopped tomatoes to the pan and cook for a further 5 or so minutes
  • Puree for a smooth soup using a plunge blender
  • Add more boiling water if needed and season to taste (salt & pepper)
  • Serve and garnish with basil and cracked black pepper as desired
